No eating out month continues

One week down, 3 to go.

We've had a lot of success with our No Eating Out Month. I've made several things from the Real Simple website. Their meals are quick and easy. Which I like. And in one week, I've saved a TON of money. S and I went grocery shopping and split the bill.

S and I have a new favorite to add to our list of faves: McCormick's White Chicken Chili. I use ground chicken instead of cubed up chicken breasts. But then! But then Eurolush linked to this recipe for chicken chili - and I'm going to have to try it now. The McCormick's seasoning mix is easy but E's found recipe sounds yummier.

We're going to be having Asian short ribs on Wednesday. At some point we'll have black bean burgers with sweet potato fries (served with a sour cream & horseradish dipping sauce).

Since I gave up the red meat, we're eating a lot of chicken and veggie meals this month. It's times like this when I miss the cow. And the lamb.

Oooh! Fish. We could have fish.

People, please send recipes!!! (No red meat, please...pork is fine.)

In other news, one of my Facebook friends-of-a-friend pointed out that there are only 76 days until graduation. Yippee!

Finally, I'm four books into my 30 books for the year.

I think that's an awesome idea. Wish I could follow-through on it. But with kids? Some nights I just can't fathom picking up a skillet to cook, then clean up. Oy.

Congrats on your first week of eating in. I'll bet you'll find lots of great recipes over the next three weeks.

I really don't eat red meat either...which means lots of fresh fish and roasted veggies. You can't go wrong there.

You might also try making home-made pizzas--sun-dried tomatoes, feta, basil, etc. Always yummy.

Three books down already? Awesome.

I have been cooking up a storm lately! One of my favorite dishes is made with rice, corn, cheese, sour cream, and an optional chicken add-in. So, ya know, not really healthy, but yummy. The ingredients are pretty adjustable though, so you can make it less unhealthy. Everyone I've made it for loves it. Except my mom - she, all of a sudden, decided she no longer liked rice. More for me! Most of my favorite recipes are appetizers though. I could seriously live on appetizers.
